Tips for Taking It Outside
- Outdoor dining is a treat during the summer months, but enjoying the great outdoor comes with its own set of challenges. Following some basic guidelines will keep everyone happy and full.
- When packing uncooked meats for the grill, set them on the bottom of the cooler, so possible leaks don't contaminate the rest of the food.
- Freezer ice packs are recommended above loose ice cubes, which will melt quicker and transport contaminates to foods not packed in a tightly sealed container.
- Serve grilled foods immediately. Perishable foods should be eaten within two hours, or one hour if the temperature is above 30ºC.
- Always place leftovers in a cooler once you are finished eating to avoid spoilage.
- To maximize the longevity of your food, refrigerate or freeze it the day before you need to pack it for the trip.
- Keep coolers and food out of direct sunlight.
- Citronella candles are a must during the summer, but keep them away from the food so the aromas don’t compete with each other.
