Monterey Chicken Grill Sandwiches
 
Here’s a hearty sandwich with a Mexican flare – topped with guacamole and salsa-like tomatoes and onion. If desired, add chopped fresh coriander (cilantro) too.

Makes 4 servings

 
Ingredients:
 
4 M&M Chicken Breast Grills
4 oz (125 g) sliced M&M Monterey Cheese
4 kaiser, calabrese or ciabatta rolls
butter or margarine, optional
3/4 cup (175 mL) spicy guacamole
2-3 tomatoes, sliced
3/4 cup (175 mL) sweet onion, thinly sliced
1 cup (250 mL) shredded Iceberg lettuce
 
Preparation:
 
Cook chicken according to package instructions. Once chicken has been turned and is almost done, place cheese slices on top. Cook until cheese melts.

Cut rolls in half, if desired lightly butter and toast in oven or barbecue. Place chicken on rolls, top each with 2 to 3 tbsp (30 to 45 mL) guacamole, tomato and onion slices, and lettuce.
