Garlic Shrimp Risotto
 
Serves 3 to 4
 
Ingredients:
 
1 pkg (12 oz/340 g) M&M Garlic Shrimp
1 pkg (1 kg/2.2 lb) M&M Rice & Vegetable Medley
1/2 cup (125 mL) each: chicken stock, white wine (or all stock)
1/2 cup (125 mL) 18% cream
1/3 cup (75 mL) grated Parmesan cheese
2 tbsp (30 mL) chopped fresh dill or parsley
salt and pepper, to taste
grated Parmesan cheese
 
Preparation:
 
Cook M&M Garlic Shrimp according to package directions. Keep warm. If desired, remove shells from cooked shrimp and chop into small pieces. (Or, serve cooked shrimp in shells on top of risotto.)

In large Dutch oven, combine M&M Rice & Vegetable Medley, stock and wine. Cook over medium heat, stirring frequently, for 3 to 5 minutes, until rice is warmed.

Stir shrimp pieces, cream and dill into rice mixture; cook 1 minute. Season with salt and pepper.

Serve immediately with additional cheese sprinkled on top.
